Remember all those blod posts where I have covered आईची खास पाककृती, mothers recipe, and most of the recipes are well appreciated by Marathi people around the world  (read all previously posted mothers recipe here)

In this blog post I have covered Chicken recipes in Marathi style, given to me by my best friend Ashish who has been to Kolhapur only to learn authentic Kolhapuri chicken rassa. He is professional cook and cooking is his passion.

It is said that if you are in Maharashtra then you must taste the authentic Kolhapuri preparations, specially Kolhapuri Misal and Kolhaouri Chicken and Mutton.

Unfortunately now a days there is a misconception that Kolhapuri means highly spicy ! which is not at all true !! Real kolhapuri chicken will never be tasted hot (high spice) but it will give you slow feeling of spices .. when you begin your meals you will not feel that it is spicy and hot, but by the time you finish your meal .. you will realize the sweat on forehead 🙂 that’s real Kolhapuri Chicken …

So we all tasted his preparations at his home and I kept documenting the recipe for all of you 🙂

And the result was awesome tasty authentic Kolhapuri chicken taste. He used Gavran chicken and hence prepared it for more time in pressure cooker. Same recipe is applicable for broiler chicken too.

mothers authentic traditional Kolhapuri chicken recipe in Marathi

  • Kolhapuri chicken rassa कोल्हापुरी चिकन रस्सा खडा मसाला

    • जिरे – १ चमचा (छोटा)
    • तेजपत्ता – ६ मोठठे
    • लवंग – ८ ते १०
    • वेलची – ५ ते ६
    • काळी वेलची – २
    • जावित्री – १ फुल
    • दगडफूल – १ इंच
    • बडीशेप – १५-२० दाणे
    • फुल (स्टार इनीस ) ४
    • ग्रॅव्ही मसाला
    • कांदे ४-५
    • लसूण १ कांदा
    • आले ३ इंच
    • मिक्सर मध्ये घालून पेस्ट करा
  • मसाला
    • खसखस २ चमचे
    • शेंगदाणा ६ चमचे
    • पांढरे तीळ ६ चमचे
    • ओला नारळ – अर्धा
    • काजू ८-१०वरील सर्व मसाला मिक्सर मध्ये कोरडा फिरवा, थोडे पाणी घालून मग बारीक पेस्ट करा

      यामध्ये कांदा लसूण मसाला ३ चमचे घाला

  • बाकीचे साहित्य
    • तेल १ वाटी
    • साजूक तूप २ चमचे

Gavran chicken rassa recipe in marathi गावरान कोल्हापुरी चिकन रस्सा पाककृती

Kombdi rassa recipe in Marathi कोंबडी रस्सा रेसिपी मराठी कृती

  • एक वाटी तेल गरम करा
  • खडा मसाला टाकून छान सुवास येईपर्यंत भाजा
  • ग्रॅव्ही मसाला तेल सुटे पर्यंत भाजा
  • आता टोमॅटो पेस्ट टाकून तेल सुटेपर्यंत भाजा
  • ४-५ मिरची + ३ चमचे हळद + ३ चमचे धने टाकून अजून ३-४ मिनिट भाजा
  • आता या सर्व ग्रॅव्ही ला तेल सुटे पर्यंत भाजत राहा
  • गावरान अथवा ब्रॉयलर चिकन चरबीसकट टाकून ५-७ मिनिटे भाजा
  • रस्सा जेव्हडा पातळ हवा तेवढे पाणी टाका (त्याच वेळी मीठ पण घाला)
  • शेवटी २ चमचे साजूक तूप घाला (रश्यावर )
  • गावरान चिकन असेल तर कुकरच्या ४ शिट्ट्या करा / ब्रॉयलर चिकन असेल तर कुकरच्या २ शिट्ट्या करा
  • कुकर बंद करून तिखट बरोबर आहे का ते बघा … जर कमी वाटत असेल तर ३-४ मिरच्या घाला
  • वरून कोथिंबीर घाला
  • रस्सा जास्त झणझणित हवा असेल तर ग्रॅव्ही पेस्ट बरोबर ३-४ हिरव्या मिरच्या घाला

 

आणि तुमचे झणझणीत कोल्हापूरी चिकन तय्यार

आता भाकरी, कांदा , ठेचा, चिकन आणि तुम्ही सर्वजण .. चेपा

    Recipe seems to be good one , but you had mentioned anywhere about the quantity of chicken required for this . Is it given for 1 KG chicken ?
