mahesh-motherIt was years ago when I published my mother’s recipe for Metkut (मेतकुट) which is one of the top hit page of my travel blog !! People keep appreciating and asking for more such Mothers recipes which are normally not written on famous websites … This is a small effort to add one more special recipe which can be done throughout the year ….

So here is a pickle prepared from fresh tender cluster beans [non-hybrid or country-side] ताज्या कोवळ्या गावरान गवारीच्या शेंगा which is available now any time of the year … Surely you will like this to be part of your daily diet .. tasty and healthy too 🙂

Cluster bean pickle recipe [Gaur or Gawar गवारीच्या शेंगांचे लोणचे]

Ingredients Cluster bean or Gaur or Gawar pickle

125 grams

Gaur or Gawar or गवार

fresh tender cluster beans [non-hybrid or country-side]

ताज्या कोवळ्या गावरान गवारीच्या शेंगा

 1 tsp Redymade mango pickle masala (Masala on Amazon)

लोणच्याचा तयार मसाला

 1 tsp or to taste Salt (मीठ)
 ½ tsp Turmeric powder (हळद पूड)
 ½ tsp Asafoetida (Hing – हिंग)
5 to 6 tsp Oil (तेल)

 Preparation of Cluster bean pickle : गवारीच्या शेंगांचे लोणचे

  • ताज्या कोवळ्या गावरान गवारीच्या शेंगा घ्या
  • शेंगा दोन वाटी मिठाच्या थंड पाण्यात पाच मिनिटे बुडवून ठेवणे
  • काढून चाळणीत घालून ठेवा
  • फडक्यावर घालून सुकवा
  • त्या कटोरीत घून एके छोटा चमचा मीठ घालणे
  • लोणच्याचा तयार मसाला एके चमचा घाला
  • त्यावर एक छोटे लिंबू पिळा(मोठे असेल तर अर्धे)
  • आता निट कालवून घ्या
  • आवडत असल्यास हिंग आणि हळदेचि फोडणी द्या
  • Take some fresh tender cluster beans [non-hybrid or country-side]
  • Soak the beans in cold salt water for 5 minutes
  • Wash them and dry it with a cotton cloth
  • Add pickle masala, turmeric powder and 1 tsp salt in it. Mix well.
  • Add lemon juice to it (As per taste, full lemon if small / half if big in size)
  • Heat oil till it smokes. Switch off the flame and add hing.
  • When oil come to room temperature, add this oil in pickle mixture bowl and mix well.
  • Transfer the pickle in to clean, sterilize, dry and airtight glass jar.
  • Again I like to eat it immediately after my mother prepares it … I do not like to wait till it marinates which takes @8~10 days.

Special Tip : 

  • फोडणीत मेथी भाजून आणि त्याची एक चिमुट पूड फोडणीत घातल्यास वेगळीच चव येते
  • Add powder of roasted fenugreek seeds into oil will add flavour to the pickle
