1 cup Rice + 1/2 a cup of Moong Dal
onions – 2 nos, chopped
green bell pepper 1 nos
red chilli powder 1 1/2 tsp
A dash of Hing
curry leaves ~7~8turmeric powder ~small tea spoon
cumin seeds ~small tea spoon
cooking oil ~ 2 table spoons
Salt as per taste
Wash Rice & Dal & soak them for 15 minutes.
Heat about 2 tbsp oil in Kadhai, splutter mustard + cumin seeds, add Hing, curry leaves, bell paper, saute on medium heat to make crispy.
Add chopped onions, turmeric, saute till onions turn pink. Add Red chilli powder.
Add Rice, dal mixture. roast on medium flame you will feel aromatic. by this time you can add some salt to taste.
Allow it to cool & pack in an air-tight plastic bag. this is ready to carry instant mix for your trek.
At trek –
Heat water in kadhai (or what every you carry in trek), add our instant mix, let the mixture boil. this should happen in ~15 minutes, now allow the thing to cool. your Mug khichdi is ready ! And if you want more taste add potato / carrot / tomatoes / green peas, whatever is available in this while cooking !
